Ingredients
1 tsp. olive oil
4 chicken breasts, cut into 1″ strips
kosher salt
Freshly ground black pepper
2 tsp. chili powder
2 tsp. cumin
1/2 tsp. garlic powder
1/4 tsp. paprika
1/4 tsp. cayenne
8 corn tortillas, warmed
1/2 red onion, thinly sliced
1 tomato, diced
1 c. Shredded Monterey Jack
1 avocado, diced
sour cream
cilantro
Lime wedges
Directions
- In a large skillet over medium heat, heat olive oil. Season chicken with salt and pepper then add to skillet. Sauté until almost cooked through, about 7 minutes.
- Add seasonings, tossing to cover cover chicken and continue cooking until cooked through, 3 minutes more.
- Build tacos: In tortillas layer in chicken, red onion, tomato, cheese, avocado, sour cream, and cilantro.
- Serve with lime wedges.
